The Bruno Paillard “Cuvée 72” non-vintage Extra Brut is a bottling of the maison’s Première Cuvée that is given an additional three years of bottle age in the cellars in Reims after its disgorgement, before it is released into the market. This new release of Cuvée 72 is from the base year of 2017 and was disgorged in June of 2021, prior to its three further years of bottle aging in the cellars. The wine offers up a deep, complex and simply superb bouquet of apple, pear, hazelnut, plenty of smokiness, a gorgeous base of chalky soil tones, warm bread and a topnote of dried flowers. On the palate the wine is crisp, complex and full-bodied, with a beautiful core of fruit, superb soil signature and grip, refined mousse, lovely focus, impeccable balance and a very long, complex and vibrant finish. Great juice!
