The Bruno Paillard “Cuvée 72” non-vintage Extra Brut is a bottling of the maison’s Première Cuvée that is given an additional three years of bottle age in the cellars in Reims after its disgorgement, before it is released into the market. This new release of Cuvée 72 is from the base year of 2017 and was disgorged in June of 2021, prior to its three further years of bottle aging in the cellars. The wine offers up a deep, complex and simply superb bouquet of apple, pear, hazelnut, plenty of smokiness, a gorgeous base of chalky soil tones, warm bread and a topnote of dried flowers. On the palate the wine is crisp, complex and full-bodied, with a beautiful core of fruit, superb soil signature and grip, refined mousse, lovely focus, impeccable balance and a very long, complex and vibrant finish. The NV Extra Brut Cuvée 72 is a solera-style blend that sees three years of aging in bottle and then another three years in bottle post-disgorgement, prior to being released. Pouring a brilliant, pale yellow color, the NV Champagne Premiere Cuvee 72 Extra Brut is refreshing yet ripe on the nose, with notes of fresh pineapple. The palate exhibits more richness and saltiness, with a slightly deeper mid-palate and broader range in this release, with notes of peach bread and almond skin. Medium-bodied, it exhibits more fleshiness of texture in this release, while featuring a lively mousse that enhances the richness of the structure. Disgorged in October 2021, it’s based on 2017. Drink 2025-2040. Dosage of 5.4 grams per liter.

This is same blend as Paillard's Première Cuvée but with longer bottle aging before release. The result is a Champagne that has a toasty edge and honeyed flavors to balance the citrus and white floral aroma. Drink the wine now.

Based on the 2017 vintage—incorporating some 28% reserve wines—and disgorged in March 2021 with a dosage of 5.5 grams per liter after 36 months sur lattes, the latest release of Bruno Paillard's NV Cuvée 72 is composed of 45% Pinot Noir, 33% Chardonnay and 22% Pinot Meunier. Having matured three years post-disgorgement, the wine is already articulate, unfurling with aromas of pear, orange zest, quince and a faint hint of honeysuckle. On the palate, it is medium-bodied with taut musculature, enlivened by racy acidity and culminating in a chalky finish. This is a considerable effort from one of the estate’s—and indeed Champagne’s—most challenging vintages. While slightly on the leaner side, it avoids austerity. Essentially, it is the familiar Première Cuvée, distinguished here by extended maturation in bottle.
