The NV Champagne Blanc De Noirs Extra Brut has a bright yellow straw color and is the second release, with a base vintage of 2019, and features only 21% reserve. The reserve wines in the blend are from 2018, 2016, and 2015. I love the intensity and focus of this wine, with notes of sea spray and fresh black fruits, including black cherry. It has a structured yet not austere character, featuring a fabulous compact core of purity and ripe black fruits, as well as refined citrus oils of orange peel and salty earth. It's vertical, yet rich, compact, and long on the palate. This is a wine that ages without a problem and, in a way, requires some time, but I do love where it’s at now. Disgorged in November 2023 with a 3 gram per liter dosage.

One of the most harmonious cuvées in Bruno Paillard's cellar this year, the 2019-based NV Blanc de Noirs Grand Cru was disgorged in June 2023 with a dosage of three grams per liter. The wine opens from the glass with a bouquet of cherry, grapefruit and pomelo, mingling with chamomile, nashi pear and a subtle touch of vanilla. The palate is medium- to full-bodied, simultaneously concentrated and elegantly muscular, combining texture with energy. A core of succulent fruit is supported by brisk acidity, and the wine concludes with a long, chalky finish. The blend draws from Verzenay, Verzy, Mailly-Champagne and Bouzy.

The NV (2019) Extra Brut Blanc de Noirs is captivating right out of the gate. Soft contours wrap around a core of kirsch, red cherry, mint, spice, dried flowers and light pastry notes. Pretty floral and mineral accents resonate on the sculpted finish. The fruit for this bottling comes from Verzenay, Verzy, Mailly and Bouzy, based on the 2019 vintage, with 12.5% reserve wines blended in. - Antonio Galloni
