Very pretty peaches, apple blossoms, honey and chalk on the nose. The palate is chalky and minerally but well integrated and rounded, with silky bubbles and delicious salt and pastry notes lingering. 100% chardonnay with stainless steel vinification. I do not get to taste Billecart-Salmon these days with anywhere near the frequency I once did, so I was delighted to have an opportunity to taste this bottle of their non-vintage Blanc de Blancs from the Base Year of 2014. The wine is made from fruit sources in the villages of Mesnil, Chouilly, Cramant and Avize, with the vins clairs fermented and raised in stainless steel tanks. Part of the malo is blocked in certain vintages and the wine includes up to forty percent reserve wines from the previous vintage. It was finished with a dosage of eight grams per liter and is drinking beautifully today, offering up an almost silky palate impression. The bouquet is nicely polished and quite complex, wafting from the glass in a mix of lemon, tart pear, chalky minerality, bread dough, white flowers and a topnote of citrus peel. On the palate the wine is bright, full-bodied and nicely mineral in personality, with a fine core of fruit, elegant mousse and a long, complex and very nicely balanced finish. This is really drinking very nicely and still has plenty of life ahead of it.

A well-tailored Champagne, with precision to the integration of its chiseled acidity, fine, lacy texture and lovely range of patisserie apple and pear, lemon parfait, pickled ginger and white blossoms. Very pale, yellow gold with a fine, pearly mousse, the Billecart-Salmon Blanc de Blanc Grand Cru Brut NV is based on the 2016 vintage and includes 32% of reserve wines in the blend. 100% cold fermented in stainless steel, it aged 5 years on fine lees and was disgorged during the third quarter of 2022. Opening with fresh and subtle notes of Spartan apple, quince, lemon balm and chalk, the light-bodied, citrusy palate offers delicate crisp apple, razor-sharp mineral intensity and bright, finely knit acidity that carries through a long, refreshing finish. The label indicates Brut, however this bottling was finished Extra Brut with a 3.9 gram per liter dosage. - Sarah Mayo

The NV Brut Le Blancs de Blancs is a powerful, resonant Champagne. This is far from an easygoing Blanc de Blancs. Baked pear, tangerine oil, hazelnut, chamomile and dried flowers stain the palate. Readers will find a very serious NV Blanc de Blancs, a wine that is very much intended for the dinner table. Billecart's Le Blancs de Blancs will challenge plenty of more "prestigious" wines. The NV Champagne Le Blanc De Blancs Extra Brut is sourced exclusively from Grand Cru villages in the Côte de Blancs, including Mesnil-sur-Oger, Avize, Cramant, and Chouilly. The blend comprises 63% from the 2018 vintage, with the remainder consisting of reserve wines from 2015, 2016, and 2017, all aimed at retaining freshness. A bright yellow color, it offers a compact, medium-bodied frame with good intensity and ripeness. It has balanced length and shows off notes of peach, pineapple, and lemon confit. Drink over the coming 10-15 years. It was aged for five years on the lees before disgorgement, 3.9 grams per liter dosage/4.5 total residual sugar.

Disgorged in June 2024 with a dosage of 3.9 grams per liter and based on the 2018 vintage, supplemented by 37% reserve wines from 2017, 2016 and 2015, Billecart’s NV Le Blanc de Blancs offers up aromas of pear, lemon confit and freshly baked bread mingled with dried flowers. On the palate, it is medium- to full-bodied and fleshy yet vibrant, with a muscular core of fruit and racy acidity framed by chalky extract. It is brighter than one might anticipate for the vintage, though undeniably of lesser concentration than the 2019 rendition. As ever, it is vinified in stainless steel and, for this bottling, is anchored in Le Mesnil-sur-Oger, complemented by wines from Chouilly, Cramant and Avize.
