Light gold with fine, persistent bubbles, the Marc Hebrart Rive Gauche and Rive Droit Grand Cru 2018 is a 50% Pinot Noir and 50% Chardonnay produced from Grand Cru parcels in Aÿ, Avize Chouilly and Oiry and fermented 100% in old oak. It is aged seven years sur latte and finished with a three gram per liter dosage. Redolent of warm apple rhubarb pie, spiced kumquat, honeysuckle and croissant, the medium-bodied palate has a fine, delicate mousse imbued with a luminous, bright and showy acidity that is refreshing and buoyant. It finishes elegantly and long with a tiny dusting of chalk. Disgorged. 31 August 2023.
