Perfect for drinking now but sure to last for another decade or more. The aromatics of this are just gorgeous, unfurling in the glass to show russet and undergrowth, liquorice, soft black chocolate and savoury but welcoming berry fruit. This 2007 vintage saw a cool summer but a warm September and October, meaning careful work in the vineyard and patience was necessary. Underestimated on release. The wines might not have the structure for long ageing as with 2010 or 2000, but they are blossoming right now, and offer great pleasure; classic balance. (Drink between 2020-2038)

High Cabernet Sauvignon and the oak upped to around 60% new, higher than usual but well integrated at 17 years on. This is showing well right now, fully in the drinking window and extremely moreish, gentle fine tannins, elegant architecture, soft blackberry and blueberry fruits, velvety texture and a drawn out finish. Deep vibrant purple color. Grapey on the nose with lots of blackberry licorice kirsch and cassis. Wow this smells beautiful. The palate is just as nice as the nose boasting notes of black currant fig blueberry and white chocolate. Lovely wine. This is one of the best wines of the vintage for this taster. Really well done.

Tasted at BI Wine & Spirits' 10-Year-On tasting, the 2007 Haut Bailly has a beautiful, quintessential Pessac bouquet with touches of warm gravel filtering through the black fruit. The palate is medium-bodied with impressive, tightly knit black fruit laced with cedar and white pepper. There is superb weight in this 2007 considering the vintage, doling out fine mineralité on the persistent finish. Very fine, but I would actually wait another couple of years before broaching. A step back from the 2006, the 2007 Château Haut-Bailly is nevertheless a forward, pretty, medium-bodied, and nicely balanced effort with outstanding purity. Textbook red and black fruit, loamy earth, and sweet tobacco define the aromatics, and while it doesn't have the concentration of a great vintage, it's a satisfying, elegant Pessac-Leognan to enjoy over the coming 7-8 years.

70% Cabernet Sauvignon, 27% Merlot, and 3% Cabernet Franc. Dense, ruby at the core with aromas of oak spice, black fruit and hints of molasses along with an herbal, earthy edge. Rich on the palate with a black fruit core, a muscular, tannic edge and classic, graphite flavors. Still full of energy yet showing its subtle evolution in its earthy undertones and dried fruit flavors. Drinking well right now and best enjoyed with steak, and still has a solid 10+ years of evolution ahead of it.

The 2007 Haut-Bailly has a tertiary, earthy nose and touches of cigar box filtering through the light black fruit. Nevertheless, it has a tough time following the last three vintages. The palate is balanced and fleshy with fine acidity. it is smooth in texture with a touch of balsamic lending edge towards the finish. It tapers slightly because of the challenging growing season. Drink now and over the next five to eight years. Tasted at the Haut-Bailly vertical at the château. -- Neal Martin
