Another new micro-cuvée from Drappier is the NV Extra-Brut Clarevallis, a bottling that pays homage to the Abbey of Clairvaux, whose monks pioneered viticulture in Urville. Offering up aromas of crisp golden orchard fruit, white flowers and stone fruit mingled with hints of clear honey and green almonds, it's medium to full-bodied, fleshy and vinous, with fine depth at the core, tangy acids and a lively pinpoint mousse. Concluding with a chalky finish, this is well worth seeking out. - WK

Open and inviting, the aromas of honey and brioche draw you in and flood the senses with acacia, toast and lemon curd. A wine that's round and ripe with tiny, fine bubbles that give a full, oily mouthfeel. Full of flavour and presence in the mouth, with a sappy, faintly bitter finish. The vineyards for this cuvée are certified organic, and the house makes their own liqueur d'éxpedition, or dosage, from organic cane sugar. Unfiltered and only low levels of sulphites used. Three-quarters Pinot Noir and the rest Meunier and Chardonnay, from Jurassic and Kimmeridgian soils, the golden straw-colored NV Champagne Clarevallis Extra Brut is from the base vintage of 2018 and opens with stony aromas of rocky earth, fresh flowers, and pear. Medium-bodied and lively, with a zesty mousse, a long spine of acidity, and a clean finish, it has a more linear feel although it does see a touch of dosage. The NV Extra Brut Clarevallis, made from 75% Pinot Noir, 10% Pinot Meunier, 10% Chardonnay and 5% Blanc Vrai (the local name for Pinot Blanc), references the Latin name of Clairvaux, because Drappier occupies the ancient cellars once constructed for that influential abbey. This wine is from organically farmed estate fruit only. The wine is golden in color, almost with a tinge of pink. The nose is vivid with juicy Mirabelle plum and ripe apples. The palate takes this fruit, backs it with yeasty brioche bun and white pepper and suffuses it with lively, youthful mousse.
