From 100% estate Cabernet Sauvignon, the 2016 Cabernet Sauvignon reveals a saturated purple color as well as a brilliant bouquet of crème de cassis, toasted spice, dried soil, and cedar pencil. Classic Cabernet Sauvignon all the way, with full body, ripe, present tannin, and a great finish, this brilliant effort can be drunk any time over the coming two decades.

Rebecca George and Francoise Peschon make this 100% varietal wine from an estate site in Calistoga along the Palisades mountain range. It is a sensuous expression of the grape, sanguine in mineral, crushed rock, pencil shaving and oak. Concentrated and densely packed in tannin, it has dried herb and fig as well as a lasting taste of black olive. This will do well over time; best 2026 –2031. — Virginie Boone

This has a ripe edge with baked-berry and dark plum-pastry flavors, carried on a smooth, long and even-paced bed of sweeping tannins. There’s easygoing drinkability here with the potential to develop nicely in bottle. Drink or hold.
