TheWineCellarInsider.com, May 2018

If you are looking for a sex in the bottle type of wine, look no further. Incredibly sensuous, the texture combines the best elements of silk, cashmere and velvet. The perfectly ripe fruits range from black plums to even...

Robert Parker's Wine Advocate, June 2010

Coming out of a relatively dormant state this 2000 is a spectacular Cheval Blanc. Of recent vintages I think only the 2009 can give it a run for its money. A blend of 53% Merlot and 47% Cabernet Franc the wine has a sweet...

jebdunnuck.com,

Closed and backward over the past decade, the 2000 Cheval Blanc seems to have turned the corner and is drinking spectacularly well today, with the hallmark elegance and complexity of this estate front and center. Sweet...

Wine Enthusiast, June 2003

...It has given a mysterious wonderful perfume to the intense richness of the Merlot. It has less of the explosive power of Ausone it is more subtle and elegant reserving its explosion of richness for the end when a...

The Wine Independent, August 2025

(96+ points) 2000 Cheval Blanc has a great, fruity nose. There is lots of freshness and cassis. The wine is well composed and has sweet tannins to support the fruit. This is a wine that will no doubt benefit from further...

Decanter,

Deep to very deep red. Sumptuous aromas of raspberries, blackberries, and menthol, full ripe and perfumed but restrained. The rich attack still shows powerful tannins, and youthful, firm acidity. It's taut and spicy...

jamessuckling.com, March 2011

A very nice nose of blackberries, dark chocolate, and flowers. Full bodied and smokey, with a meaty, mushroom, tobacco, and berry character. Wonderfully long, long finish to this muscular wine with fine tannins. This is...

Vinous, September 2021

The 2000 Cheval Blanc is a wine that I have encountered more than a dozen times. Now at just over 20 years of age (how time flies - I remember tasting this from barrel), it has a lovely, quite beguiling bouquet of brambly...

Wine Spectator, January 2016

A light menthol hint gives way to bay and tobacco leaf notes, which hold steady throughout, while the core of dark currant and fig fruit flavors takes on a warm, macerated, almost hedonistic feel. The finish has a tarry...

Formerly known as vin de Figeac, this wine was first sold under the name Cheval Blanc in 1852. The first gold medal won by Cheval Blanc came at the 1878 Universal Exhibition in Paris and that distinction appears on the label.

Each vineyard plot is vinified separately. At the start of fermentation, the juice is gently pumped over three times daily. As fermentation proceeds, pump-over frequency decreases and is eventually stopped when the desired level of extraction has been reached.

The young wine is aged 16 to 18 months in new French oak barrels. Six to seven different coopers are used to ensure complexity and harmony. During this period, the wine is racked by hand five to seven times. Blending takes place after the first three months.
