The agaves are planted north to south to maximize sunlight, developing piñas with exceptional sugar levels—nearly 30% of their weight. Staying true to Ocho’s mission of highlighting agave and terroir, the piñas are slow-roasted, naturally fermented, and distilled in copper pot stills before being laid down in ex-whiskey barrels for just shy of the minimum aging required for Extra Añejo.
