2012 Domaine Sigalas - Assyrtiko Santorini
"Domaine Sigalas has been making wine on the island of Santorini since 1991, and they have been pioneers of organic farming there since 1994. Santorini is in the heart of the southern Aegean Sea, where the growing season is hot and dry. Porous volcanic soils and evening fog ensure that the vines enjoy a steady water supply, however the indigenous Assyrtiko grape is one of the few white varietals that can retain its acidity in spite of the heat. The Assyrtiko of Domaine Sigalas is fabulously minerally and utterly refreshing. We recommend enjoying a cold bottle outside on a hot, sunny day." -SFWTC Staff
