2010 Kabaj - Rebula Goriska Brda Slovenia
"The white Rebula grape, aka: Ribolla, means “to reboil,” an apt name given its natural tendency to undergo a secondary fermentation. Jean-Michel Morel de-stems the crop, presses it, and immediately leaves the juice to ferment in open-topped oak vats with its skins on native yeasts for 30 days. The contact with the skin imparts a rare and wonderfully tannic structure to the wine, offering up beautiful aromatics and a gorgeous orange hue. While this “orange” wine sits in a new class of styles, it does not at all take on the oxidative qualities of other orange wines. In fact, its natural freshness and balanced acidity makes it a wonderful food wine, and a great selection for red wine drinkers in search of something new." -SFWTC Staff
