"The Cesari family is practically synonymous with DOC Amarone della Valpolicella. Amarone is among the best wines of Italy's Veneto, and the Cesaris among its finest producers. The clay and limestone vineyard of Il Bosco is situated in the town of San Pietro in the heart of the appellation. Selecting only the best fruit for this cuvee, the family dries the grapes traditionally to concentrate the sugars, ferments them and then racks them off their lees to undergo secondary fermentation. They age the wine for two years in French and Slavonian oak to impart complexity and finesse. Bursting with notes of black cherries and earthy spices, its velvety finish makes it a hearty pairing with slow roasts of all kinds." -SFWTC Staff
