Calisaya - Liqueur
"At one time, this was a common bitter liqueur in the pre-Prohibition era. Calisaya is actually a type of bitter made from Cinchona bark. It has been given new life by a small producer in Eugene, Oregon who uses the Cinchona along with various botanicals, flowers and Valencia oranges. It must be experienced to be explained, although try replacing it in a cocktail calling for Campari and see what you think." -Fred Tocchini, SFWTC Staff
