Macvin has been in production since the fourteenth century, but only in 1991 attained its AOC of Macvin du Jura. It is made from five permitted grape varieties, and can be red or rosé when produced from the Poulsard, Trousseau and Pinot noir, or white when produced from Chardonnay or Savagnin. The grapes are harvested late in season when their sugar content is at its highest, and the fermentation is stopped by the addition of Marc du Jura, a brandy-like spirit made in the region. A rare wine to enjoy as an aperitif or dessert wine with soft cheeses and perhaps some dried fruit.
