Units in Stock: 48 nv Dibon, Cava, Brut Reserve Penedes. Spain’s answer to Champagne is appropriately called Cava after the cellars (or caves) in which the wine is traditionally aged. Only produced on Spain’s eastern coast in the Catalonian region of Penedes, Cava is one of the world’s most celebrated sparkling wines. While there is admittedly much variation among the producers of Cava, Dibon certainly stands out as one of the finer estates. Since 2009 their entire production has gone 100% organic and all of their fruit comes exclusively from their estate-owned vineyards overlooking the Mediterranean Sea at an elevation of 1000 feet. Produced entirely by hand, this toasty, yeasty, citrus-infused, appley delight is a serious wine at a not so serious price.
