This outstanding Cava is composed of estate-owned indigenous grape varietals, with Xarel-lo, Macabeo and Parellada making up the blend. The mousse is creamy but the bubbles are fine and vigorous, making this an excellent choice as an aperitif, palate cleanser, or dinner wine. Hints of baker’s yeast and vanilla cream abound followed by sweet Fuji apple, tart green pear, crisp minerals and laser-like acidity.
